I love a good ice lolly in the summer. I’ve played around with lots of different recipes in the past, but I’ve found that the really simple combos of fruit with a little yoghurt always turn out the best. For a bit of fun, I thought I’d try creating a two tone lolly and it came out perfectly! I used this ice lolly mould set from Amazon which uses little wooden sticks.
What’s also great about these is that they’re so child friendly. Finley loves them and I’m thinking of making a big batch of them for his birthday party if we have a nice day. There’s definitely no better way to cool off than with a delicious lolly!
As freezing something tends to dull down the sweet flavour, it’s best to use super sweet ripe and juicy fruit in this. If you don’t have ripe fruit then I’d add a couple of tablespoons of honey to up the sweetness.
In terms of creating the two tone effect, there’s no tricks needed. Just pour in the second layer gently – I spooned it in – and you should get a lovely mingling of layers that looks really pretty and impressive for any friends you’d like to serve these to!
I went with banana and nectarine in this recipe, but you could very easily switch up fruits to your hearts content. Peaches, strawberries, blueberries, blackberries, cherries and even plums would work well in this recipe. Plain yoghurt adds some creaminess and can easily be swapped for coconut yoghurt to make a dairy-free version.
- 1/2 large banana
- 1/2 cup plain yoghurt
- 1 ripe nectarine
- 2 tablespoons honey (optional)
- Prepare your ice lolly mould, ready to use.
- Blend the banana and half the yoghurt until smooth and pour into the moulds about 1/3 of the way up.
- Blend the nectarine and the remaining yoghurt and gently spoon the mixture on top of the banana mix.
- Freeze for at least 24 hours before removing from the mould and eating!
