Lemon Heaven and M&S Love

Well I don’t know what it is, but this morning I’m feeling on top of the world! Perhaps it’s the weekend ahead filled with Wimbledon, Glastonbury and F1 on the TV and no other major plans so I can just chill! After last weekend’s trip to York and my unfortunate bladder infection, I’m ready for a lazy one.

I’ve just been wanting to be able to feel comfortable at work this week, and I saw this pin on Pinterest which inspired the vest and denim shirt combo.

Workouts have been good:

  • Weekend – rest / walking around York
  • Monday – Gym – 10 mins cross trainer // squats + chest press // 10 mins step machine // deadlift + rows // 10 mins bike // shoulder presses, crunches
  • Tuesday –  30 minute Meta Fit style workout in the office with my colleagues
  • Wednesday – Gym – 10 mins cross trainer // lunges + chest flyes // 10 mins step machine // single leg deadlift and reverse dumbbell flyes // 10 mins bike // sit ups, lateral raises
  • Thursday –  3/4 of a Blast FX body weight PHA DVD workout (got bored towards the end!)
  • Friday – Gym – 10 mins cross trainer // spilt squats, front dumbbell raise // 10 mins step machine // sumo squats, incline dumbbell chest press // 10 mins bike // sit ups on stability ball, lat machine, leg raises

Yesterday I thought I’d try out a new workout DVD I’ve been send to review. I was out of the office yesterday (and today) but have had loads of work to do. I had planned to go to the gym then, but really wanted to crack on with work. I decided to try and do the DVD, I managed about 3/4 of it before the pull of the computer made me finish and get back to work! Note to self – if busy workout first thing in the morning, or go to gym away from distractions!

Eats have been a bit of a mix up this week. I’ve been waiting for pay day so enjoyed a huge shop yesterday, but before that I was just using up random things. Eggs always seem to be good to base a meal around:

For breakfast yesterday I fancied something a bit different so whipped up a quick microwave coconut ‘rock bun’ (that’s the closest thing I can think of this being like!) I combined 2 tbsp of coconut flour, pinch of baking powder and 1/2 cup of egg whites then nuked for a couple of minutes. I wish I had added some raisins but it was great as it was:


Topped with drippy almond butter and several fresh apricots it hit the spot!

This week I’ve been enjoying lots of mackerel. The honey smoked variety from Sainsbury’s was a nice change to the usual mackerel tinned in olive oil:


For some reason mackerel and beets go together so well!

Last night I made some simple Cajun spiced salmon:


I just sprinkled the salmon with a Cajun spice blend, wrapped in a foil parcel and baked at 200 for 20 minutes. Perfect! I love some lime juice squeezed on top as well.

In addition to the lovely Serrano ham my Aunt and Uncle brought with them, I also got the remainder of a jar of my Aunt’s homemade lemon curd to finish off. Oh my word let me tell you, this stuff is amazing! I had it with some 2% Total Greek yoghurt (on offer in Sainsbury’s) as a late night snack:


Heaven right there! I made use of it this morning on top of some of my simple protein pancakes with blueberries:


I’m not ashamed to say I licked the plate after those!

On the Love List this week…


I love Marks and Spencers. I just can’t help it! They’ve opened a big new store not far from where I live and it was rather sad how excited I was to visit it! I had a few pounds left on a gift card so treated myself to lunch. I adore those little mooli ribbon wraps, I got the Vietnamese pork ones yesterday (along with some Nacho chicken wraps) and when we were in York I had some beef ones. If only they weren’t so damn expensive! Also…

A couple of special mentions on two wonderful things this week – firstly, I’ve had a few Uniquely Healthy clients finish their 6 month coaching programmes with me, and I could not be more proud of them and what they have achieved – they know who they are, well done! Also, this was my last week of being in full time employment. Next week I go part time, and will ‘officially’ be working through Uniquely Healthy part time as well. Excited and slightly shit scared if I’m honest!

  • I love lemon curd, but could easily sit and eat a whole jar, so I try and avoid! I also love Marks and Sepncers food and have been eying up those ribbon wraps, but am put off as I don’t like sweet chilli sauce, and worry they would be bland/dry without it. And of course the price as they aren’t substantial enough on their own! I’ve been on a mackeral kick this week too, even had some for breakfast!

      Yes I have been having trouble keeping the spoon out of the jar! The beef ones from M&S have a soy / hoi sin type dip I think. But yes you have to have something to go with!

  • I’m also a massive fan of M&S – their fruit is always so perfectly ripe and tasty – it is properly pricey though, it’s really only rare treat territory for me! Good luck with your upcoming changes Laura, I hope the part time working goes well for you – I’m sure you’ll be a massive success :)

    Eggs are always make a good option for a meal anytime of day..I'm obsessed with them at the moment!
    As much as I hate to say it because I always used to moan at how M&S was for grannies when I was younger and my mum dragged me in on our weekly shop, I actually do love their food haha! It's really good quality, especially their fruit and veg but yeah, you pay the price. I love their cooked chicken packs..they do loads of flavours like mexican and moroccan and they're so good on salads! :)

  • I’m really glad you’re feeling better in yourself! I don’t blame anyone for not being particularly chirpy when they’ve had such a nasty infection!

    I used to buy a lot of food from M&S, but now I stick to the fruit for a treat. I particularly love their apples and berries. All of the salads are too fancy for me ;)

    My Granny used to make lemon curd for my Mum as it was a favourite from her childhood, but I can’t say it was really my thing. I used to be partial to lemon meringue pie though – close I suppose ;)

      Their fruit definitely seems to be popular! Yes lemon meringue pie is definitely that kind of flavour, I used to love it all apart from the pastry on the bottom!

      • Me too! I used to just eat the meringue and lemon filling and then leave the pastry. I’ve never liked pastry…in fact I think I did the same thing with every dessert that involved it (apple pie, cornflake tart…I’m sure there were more).

  • I love, love the foods at M&S, especially those bites! The tuna with edamame are fab. That lemon curd looks absolutely amazing, I’m such a fan of the stuff. Last year I got through jars and jars every week, used to have it with fruit and yoghurt. Yum!

  • I love lemon curd, although my fave is lime curd (and the one the National Trust sells is the best)- I have tried a few others- vanilla, passionfruit, but lemon or lime are the tops :)

    Oh, and that is why I don’t stick with exercise DVD’s- I get distracted with housework etc, whereas if I am out the house I just get on with it!

  • Love the outfit! I love the casual shirt over vest look.
    I’m such a big fan of M&S food. You can always get a good salad or sandwich there and their meal for two is always a good offer.
    And definitely a big thumbs up to lemon curd. I used to have it on toast throughout my childhood so it always brings back good memories!
