Happy Wednesday everyone! I thought I’d share a completely different day than usual with you for WIAW, these are my eats and what not from last Friday when I had the day off for a little ‘me day’, i.e. a day to do with what I please!
I kicked off my day with a trip to the gym. I did my strength training workout with a 5 minute jog on the treadmill to warm up followed by 15 minutes of high intensity intervals on the bike. As I wanted to get to town early I made breakfast in advance. I had a bowl of semi frozen mixed berries topped with some chia seed pudding made with 2 tbsp of chia seeds, 1 scoop of chocolate sun warrior protein powder, 1 scoop of cococardio, stevia and water. I added a few flaked almonds on top for added texture:
I drove to Newcastle and made a bee line for the farmers market where I bought my weight in kabocha squash and organic veggies, check out this rainbow chard:
Such a beautiful veggie :-) I then met up with Nicky for a Soy Chai Latte:

I had been planning on heading to the Living North Christmas Fair and I was getting a bit hungry so I ate an apple and a peanut butter Clif bar in the car while I waited for my sat nav to work:
I ate the Clif Bar before I remembered to take a pic so here’s the wrapper!
As it turned out my sat nav decided not to work at all and as it was chucking it down and I had no idea how to get to the fair myself, I decided to just head home and enjoy an afternoon in my sweat pants :-)
After unloading the shopping I snacked on a plate of chopped veggies – 2 carrots, 2 beets, half a cucumber, a food doctor spelt cracker and 2 tbsp of tahini:
A bit later I had a craving for greens and as I had a big bag of spinach in the fridge a green smoothie just had to be made! I had a simple one with lots of spinach, frozen banana, vanilla sun warrior protein powder, vanilla stevia, gums, water and ice. I topped it with peanut flour sauce and bee pollen.
For dinner I decided to make a ‘clear out the fridge’ type meal. I made some raw noodles out of a courgette and topped with some roast kabocha. On top of this I added some veggies stir fried in coconut oil with ginger, chilli and tamari – broccoli, rainbow chard, spring greens, carrot and edamame. To make it extra delicious I made some almond miso sauce mixing 1 tbsp of almond butter with sweet white miso, tamari and hot water:
It tasted so good, that almond sauce was a winner! For dessert I made a wonderful snack plate:
This included dark chocolate, tahini, dried apricot, candied ginger and a chopped apple along with a mug of Tea Pigs Popcorn tea. I ate this in bed while finishing the first novel I’ve read in ages, it was bliss :-)
